If you scroll to the bottom of the screen that shows the software version there should be two sliders that allow OTA updates. Make sure that both are moved to the right, then it should work if you are in an area with a good mobile signal.
Not sure about the HEV but using the Electric Kona my Bluelink app allows me to defrost and warm/cool seats. They appear under Remote/Climate settings.
